It was here that Jimmy, a young Greek-Canadian cook with flour on his apron and grease under his fingernails, unlocked the front door of a tiny 6-table diner for the very first time.

Jimmy didn't come from money, but he possessed something far more valuable: an unyielding respect for good food and a secret recipe for Greek-style meat chili passed down from his grandmother in Thessaloniki. Equipped with nothing more than a second-hand 4-foot flat-top griddle and a passion for hospitality, he set out to craft a burger that would make the hardworking people of Portage feel right at home.

The early days were tough. Jimmy would wake up at 5:00 AM every morning to hand-knead fresh buns and grind whole cuts of Canadian beef himself. Local farmers, truckers, and families passing through Manitoba began noticing that something special was happening inside that small wooden cabin. The smell of searing seasoned beef and slow-simmering aromatic chili drifted down the block, and before long, line-ups stretched out into the chilly prairie morning.

Every morning at 6:00 AM, our kitchen crew hand-cuts those potatoes into thick crinkle-cut fries, double-blanching them for that perfect golden crunch on the outside and fluffy potato center.

Today, over 35 years since that first burger hit the flat-top, Jimmy's remains family-owned and fiercely independent. The tiny roadside counter has evolved into a warm, luxury cedar dining cabin, but the soul of our kitchen has never shifted an inch.

We regularly welcome three generations of families sitting together at the same booth. Grandfathers who grabbed late-night burgers after high school hockey games in the nineties now bring their grandchildren to introduce them to their very first Fatboy and hand-spun dairy milkshake.
